One Sunday morning a few weeks ago, I was up early, it was a beautiful day and all I wanted to do was to sit outside on my deck with a cup of tea and a muffin. So, I made these muffins. They are quick, easy, grain-free, and they taste great. I kind of hoard healthy muffin recipes. Every time I see one that sounds good, I put it aside to try it out. I love to make up my own savory recipes but I’m really happy when I find a good baked goods recipe that comes out good without my having to think about it too much. This is one of those recipes, so thank-you PaleOMG for this recipe!

Apples have a high antioxidant content, especially Granny Smiths and Red Delicious. This, combined with the fact that they have a lot of healthy fiber, is why apples are good at fighting Alzheimer’s, Parkinson’s and some cancers. They have also been shown to help ward off diabetes, high cholesterol and gallstones. An apple a day…

In Chinese medicine, green apples are considered to have the most health benefits. They help detoxify the body and strengthen the teeth and bones. They are also given to patients to help with depression.
