I love making a big bowl of sesame green beans as a side for a BBQ. Here, I’ve elevated this simple bean dish by adding pea shoots, sesame seeds and almonds. Pea shoots are the young leaves of the pea plant. They are usually sold in plastic containers in the produce section of the market and are usually located near the sprouts. These delicious little shoots contain cancer preventing agents, are high in antioxidants and are good at fighting inflammation in the body. Also, they look pretty, taste good and are kind of fun to eat! Add almonds and sesame seeds and you’ve got a bowlful of nutritious, delicious, and pretty beans and greens — the perfect side dish for any BBQ.

Get a big bag of fresh green beans and trim the ends…

Steam them just until they are crisp-tender…

Drain them and rinse them under cold water, then dry them (I like to spread them on a dish towel)…

Take your  pea shoots…

Some chopped raw almonds…

Black and/or white sesame seeds (I like to toast them in a dry skillet)…

And put it all into a big bowl with some brown rice vinegar, grapeseed oil, salt and pepper.

Toss it together and serve alongside any grilled meat or fish…

Green Beans And Pea Shoots
(serves 8)

1-1/2 lb green beans, ends trimmed and beans steamed until crisp-tender and dried on a towel
1 cup pea shoots
1/4 cup white sesame seeds, toasted in a dry skillet
1/4 cup black sesame seeds, toasted in a dry skillet
1/2 cup raw almonds, roughly chopped
1 tsp sea salt
1 Tbs grapeseed oil (or oil of your choice)
black pepper to taste
1 tsp brown rice vinegar

Combine all ingredients in a large bowl. Yup, that’s it. Enjoy!
