It’s no secret that I love to entertain. One of my favorite times to have people over is for happy hour. A few good drinks and delicious appetizers make everything right. Here’s a perfect appetizer for happy hour. I made a big bowl of this easy salad and served it in 12 separate martini glasses so that everyone had there own individual portion that was easy to walk around with. Actually, in my house, everyone ends up standing around the kitchen, but still… it would work if anyone actually wanted to walk around and mingle with one of these in hand…

Shrimp used to get a bad rap because people were afraid they raised cholesterol levels. Now, research shows that they actually can lower triglycerides because they are rich in Omega-3s.  And, they are high in protein and low in calories, so really, they are a pretty good thing.

Avocados are one of my favorite foods, both for their health benefits and just because they taste great! In Chinese medicine, some practitioners recommend avocados to raise the sperm count. I like them because they are good for anemia, dry skin, palpitations and hot flashes due to menopause.

You’ll need some cooked shrimp for this recipe. I bought mine raw and cooked them, but you can certainly buy them pre-cooked if you prefer…

I cooked them with the tails on, but then when I decided I was going to serve them in the martini glasses, I thought it best to remove them…

Then I diced up avocado, basil and celery and added some halved grape tomatoes and a handful of capers…

I tossed this all together with olive oil, lemon juice, cocktail sauce and a pinch of sea salt…

Shrimp And Avocado Salad
(serves 12 as a happy hour appetizer)

2 lb. shrimp, cooked and cleaned, tails removed
1-1/2 pints grape tomatoes, halved
2 stalks celery, finely diced
1 Tbs capers
1 cup basil leaves, julienned
2 avocados, diced
1/4 cup extra virgin olive oil
juice of 1 lemon
1/4 cup prepared or homemade cocktail sauce
pinch of sea salt

Mix the shrimp, tomatoes, celery, capers, basil and avocado in a large bowl. Gently stir in remaining ingredients. Serve in martini glasses. Enjoy!
