Grilled chicken is a barbecue-season staple in our house. This is the simplest, most basic grilled chicken recipe. It’s perfect for entertaining — sometimes I make a huge platter of it and serve it alongside wraps, rolls, and collard green leaves and all of the fixings to make your own sandwiches. Not only does it taste good, but it solves the problem of feeding guest with different tastes, especially if you put out some hot sauce, curry condiments, mayonnaise… really, everyone can be covered by this one dish (except vegans!). It’s also great to keep in the fridge for leftovers. And, because it’s boneless, it’s really easy to cut up and toss in salads or pastas or whatever…

Chicken, especially if it’s organic, is a wonderfully healthy protein. It helps boost energy levels and is particularly good for people who are weak after being sick or who have just gone through some sort trauma. It’s one of the healthiest proteins to serve the elderly and it’s been shown to relieve some arthritic symptoms.

Lemons are good for your stomach. They can also quench thirst and soothe a sore throat; that’ why tea with honey and lemon is so popular for a sore throat. Everyone should drink a big glass of water with lemon juice in the morning to help the body start a natural detoxification each day. I try to get everyone I know to drink lemon water every morning. If you were a fly on the wall in my house, you would see me each morning with a quart-size mason jar in my hand with lemons and water.

Add your favorite oil and some herbs and a bunch of lemon slices…

Add the chicken. I used organic boneless thighs. Season with sea salt and black pepper…

Let this marinate in the fridge for as little as one hour or as much as one day. Then, place it on a hot grill with the lemon slices on top of the chicken…

Cook about 10 minutes and flip…

Cook about another 10 minutes, or until the chicken is cooked through…

Serve it on a platter or store it in the fridge for later. Enjoy!

Simple Grilled Lemon Chicken
(serves 6-8)

8 boneless skinless organic chicken thighs
sea salt and black pepper
juice of 2 large lemons
2 more lemons, sliced horizontally
1/4 cup grapeseed, extra virgin, or avocado oil
about 10 sprigs of fresh thyme (or more — I just grab a handful)

Season the chicken with salt and pepper.

In a zip-top bag, combine the oil, lemon juice and thyme. Add chicken and lemon slices. Mush it around good. Seal the bag and let marinate in the refrigerator for one hour to one day (overnight is best), flipping the bag over occasionally.

Preheat the grill to medium-high heat.

Place the chicken on the grill and place the lemon slices on top of the chicken. Grill on the first side for about 10 minutes, or until the chicken easily releases from the grill. Flip it over and continue cooking until it’s done, about another 5- to 10-minutes. Serve on a platter with the lemon slices (I like to eat the grilled lemons as much as the chicken…) Enjoy!
