It’s Monday and it’s the first day of spring! So, happy spring… I know, the weather report says there’s another snow storm coming this week here in New York… but outside today it actually smells a little like the warmer weather might actually be on its way. Yup, even here in the city I can smell it. I can tell. I swear. It’s going to be spring soon. Fingers crossed.

Right before this past weekend, I was trying to step over one of my dogs who was sprawled out on the floor, and I got my toe caught on a chair leg in my living room and now it’s broken. Oh my, have you ever broken a toe? It’s really painful and you really do see stars. And there’s not much you can do to make it heal quickly. You never realize how many things you do during the day until you are restricted because of an injury. What I’m finding is that because I can’t do yoga for a little while or go on long walks in the park with the dogs, I have extra time to myself, and for me that means extra time in the kitchen.

I’m a big believer in not feeling sorry for myself. Especially over something fairly minor like a broken toe.

But, I’m also a big believer in doing whatever I can to make myself feel better. So, I allowed myself a few minutes of cursing and despair, and then I thought about what this injury would give me the excuse to do that I don’t usually get a chance to do. You know, like binge watching something mindless or reading more books than usual…. or cooking even more.

And, one of the things that always makes me smile is reading all of my favorite food blogs. When I saw Caitlin’s awesome recipe for a sweet potato breakfast bowl on From My Bowl, I just knew I had to made a version of it.

Okay, so here’s where I connect the dots of my ramblings… creamy, comforting, warming bowls of food always make me feel better. That’s how this creamy sweet potato bowl came to be. This bowl actually made me so happy that I made it three days in a row. And, if I hadn’t run out of some of the ingredients, I could have continued to make it for a few more days.

One of the awesome things about this recipe is that you can customize it any way you like. And it’s really easy. All you do is roast the sweet potatoes and combine the flesh with a few ingredients. After you scoop the creamy mixture into your favorite bowl, you can top it with whatever makes you happy. I was so in love with the bowl I made the first day, I made it exactly the same way each day I ate it… and I rarely eat the same exact thing twice. So, I highly recommend this creamy sweet potato bowl recipe it appears below.

Here are some of the healing ingredients in this creamy sweet potato bowl:

Sweet potatoes are good for your digestive system. They can be good for both constipation and diarrhea. These orange gems also help rid your body of excess water, are good for breast health, help people with diabetes and actually can help ease night blindness. In olden times, it was common in China to rub mashed sweet potatoes on poison insect bites to remove the toxins. I haven’t tried this, but if you see me looking a tad orange, this will be why…

Pomegranate seeds nourish the blood. In Chinese medicine, we know that many illnesses and conditions are caused by the body making poor quality blood. Pomegranate seeds are great at helping the body make good quality blood. They are also good to combat diarrhea, anemia and incontinence.

In eastern medicine, nuts are known to be good for your brain, heart, skin and reproductive system. Almonds are particularly nutritious. They are a good source of protein and they give you energy. And, they are gluten-free. Almonds will help relieve a cough and asthma and are also good for constipation. This recipe uses almond milk and can also include almond butter.

Cinnamon is one of the best herbs to warm the body. It’s great if you have a cold. If you are nauseous or have diarrhea, go for the cinnamon. It also gives you energy and helps with menstrual pain. Cinnamon is a Chinese herb: “gui zhi” is the cinnamon twig and “rou gui” is the cinnamon bark. Both are warming and are used for a variety of ailments. In the winter I add cinnamon to all sorts of foods. It helps with the common cold, swelling, various menstrual issues and some aches and pains. Be careful with it if you have a fever because it is so warming.

Research shows that pumpkin seeds may reduce blood sugar and increase bone density. And, because they are rich in iron, they are good if you are tired or have anemia. In Asian medicine, pumpkin seeds are sometimes used to get rid of intestinal parasites and to decrease inflammation in the body.

Sunflower seeds help lower blood pressure and can relieve headaches and dizziness. In Eastern medicine we recommend eating sunflower seeds if a person is troubled by certain severe intestinal symptoms like dysentery, or intestinal worms or certain parasites. These seeds also contain calcium and magnesium and have anti-aging properties. In Chinese medicine they are often prescribed to get rid of rashes. I like to use sunflower seed butter in this recipe.

This is so creamy and comforting and it can be customized any way you like. Make one of these bowls for breakfast, lunch, or dinner... it will put a smile on your face and heal you at the same time.
Ingredients
  • 1 large sweet potato
  • ½ cup almond milk
  • 1 tsp ground cinnamon
  • ½ tsp vanilla extract
  • 1 Tbs sunbutter (sunflower seed butter) or almond butter (Here's the sunbutter I like)
  • sea salt, to taste
  • toppings: pomegranate seeds, pumpkin seeds (Here's some sprouted ones), cashew yogurt (or another non-dairy yogurt)
Instructions
  1. Preheat your oven to 400°F.
  2. Poke a bunch of holes in your sweet potato with a fork.
  3. Place the sweet potato on a piece of foil or a small baking sheet and roast in the oven until cooked through -- about an hour.
  4. Remove the potato from the oven and slice it in half.
  5. Scoop the flesh into the bowl of an electric mixer. Add the almond milk, nut butter, cinnamon, and sea salt. Mix until completely creamy. (You can also use a hand mixer or a blender for this.)
  6. Scrape the creamy mixture into 2 bowls.
  7. Top with pomegranate seeds, pumpkin seeds, and a big dollop of yogurt.
  8. Enjoy!

Raw Chocolate Pomegranate Tart

I was going to a friend’s house for dinner the other night and I wanted to bring a dessert. If you know me, you know that while I can cook just about anything, I am not a great baker. And that’s saying it very kindly… I’ve been known to burn slice and bake cookies. So, when I tell you that this raw chocolate pomegranate tart is the best dessert I ever made, that’s another way for saying this recipe is idiot-proof.

One of the reasons — and I can’t stress how important this reason is — that I was able to achieve such perfection with this dessert is because the original recipe is just genius. All of that genius-credit goes to Joscelyn at Wife Mama Foodie. I just love when I can take an existing recipe and have it come out perfect the first time, so a big thanks to you Jos!

Some people are fruity-dessert people. And some people are nutty-dessert people. I am a chocolate-dessert person. And if it’s a flourless, dense, rich, creamy, velvety chocolate dessert like this one… I’m all in.

The only downside to this tart is that because it’s healthy, I’m easily able to rationalize why I can and should eat WAY too much. I think it took me a maximum of 15 seconds to scarf down a good size slice… ugh.

Back to my friend’s dinner party — I brought this dessert. And it looked beautiful. Everyone expects whatever I bring to be delicious, so I was a little nervous because this was not something I could taste before I brought it there. Can I just say that this raw chocolate pomegranate tart is unbelievable! The chocolate filling is so creamy and fudgy and the pomegranate seeds are mixed into the filling AND they are shining pretty on top… it’s the perfect taste and texture, and it’s just so pretty!

I will be making this dessert for Thanksgiving too! Which is actually kind of laughable since my brother-in-law owns a bakery and always brings a ton of desserts… but, I rationalize that I can bring this because a) it’s a healthy option and b) he’s not a chocolate-dessert guy, so someone’s gotta bring it…

Here are some of the ingredients that make this raw chocolate pomegranate tart a healthy dessert:

Raw cacao is a superfood. It is packed with magnesium, iron, zinc and other minerals. Not only is it packed with health benefits, but it actually has properties that help the body absorb nutrients better and it’s filled with antioxidants. Cacao can actually be translated as “food of the gods”… Raw cacao can help lower blood pressure, promote healthy heart function, improve digestion, and may even help increase the libido.

In Asian medicine, we use coconut to strengthen the body, reduce swelling, and stop bleeding. Coconut kills viruses, bacteria, and parasites. It’s good for all types of infections and viruses in the body, including the flu, bronchitis, tapeworms, urinary tract infections, and herpes. And perhaps most importantly, it helps you keep your mind sharp and it makes it easier for you to focus. The filling of this tart is made with coconut oil.

Dates are rich in potassium, dietary fiber and tannins. Fiber is good for your gut and tannins help the body fight inflammation and infection. Dates are also rich in vitamin A and iron. The most amazing thing about dates is that they can be used to replace sugar in almost anything. I stopped using sweetened protein powders in my smoothies and now I use unsweetened ones but I add a few dates.

This is the creamiest, richest, most decadent simple chocolate dessert around. And it's raw. And it's idiot-proof. And everyone loves it! Oh, and it's healthy!
Ingredients
  • For crust:
  • 1 cup pitted dates
  • 1 cup walnuts
  • pinch of sea salt
  • For filling:
  • 1-1/2 cups raw cacao powder
  • 1 cup plus 2-Tbs pure maple syrup
  • ¾ cup coconut oil, melted
  • 1 tsp vanilla extract
  • pinch of sea salt
  • ⅓ cup pomegranate seeds
  • For topping: an additional ¼ to ⅓ cup pomegranate seeds
Instructions
  1. Make crust:
  2. Place dates, walnuts and salt in a food processor and process until the mixture is smooth and sticky.
  3. Press the mixture into a tart pan with a removable bottom. (I used a 9-in. round pan.)
  4. Place the crust in the freezer while you prepare the filling.
  5. Make filling:
  6. Combine all filling ingredients in a large bowl until smooth.
  7. Pour the filling into the crust and smooth it out.
  8. Sprinkle the top with pomegranate seeds.
  9. Place the tart in the refrigerator to set, and keep it there until you are ready to serve it.
  10. Slice and enjoy!

Tomato Pomegranate Salad

Salads don’t have to be boring! Try this tomato pomegranate salad for a change of pace…

Last week I had a counter filled with tomatoes. You know how it is… I went to the farmers market and there were tomatoes everywhere. I mean everywhere. Red ones. Yellow ones. Purple ones. Teardrop shaped ones. Oval ones. Round ones. Big ones. Little ones… you get the picture… This tomato pomegranate salad was the perfect use for this gorgeous variety of tomatoes.

Back at the market, I just started filling my bag. It was like I was possessed. But, in my defense, they were so pretty — like jewels.

I made a lot of dishes with these beauties. And there were still more.

Sometimes the universe just provides you what you need. I opened my email inbox one morning that week, and there were my weekly recipes from The New York Times, and ta-da… one of them was for their tomato pomegranate salad.

This is the perfect dish for all of those ripe summer tomatoes! You can customize it with whatever fresh veggies are in your fridge...
Ingredients
  • 16 oz heirloom tomatoes, cut into bite-size pieces
  • 3 Tbs extra virgin olive oil
  • 2 tsp za'atar (or use spice blend of your choice)
  • 6 Tbs pomegranate seeds
  • ¼ cup very thinly sliced red onions
  • 3 large basil leaves, sliced into thin ribbons
  • cubes of vegan cheese (or cheese of your choice)
  • juice of ½ a lemon
  • sea salt, to taste
Instructions
  1. Combine the oil and the za'atar in a small bowl.
  2. Combine remaining ingredients in a large bowl.
  3. Toss with the oil mixture.
  4. Enjoy!

Blackberry Kombucha Ice Pops

Blackberries are great to reduce intestinal inflammation… and, they will make your skin luminescent!

I love ice pops. I love kombucha. Oh, and fresh berries… well, they are divine! So, these blackberry kombucha ice pops have become my new favorite dessert.

If you are one of those people who craves sweets after dinner (or after lunch, or after anything…) then you are the perfect candidate for these ice pops. I mean, think about it. If these were in your freezer now, you could just grab one anytime you want one. With no guilt. Yup, absolutely none.

These ice pops are made with no added sweeteners. But they are sweet. And tangy. And have a bit of a pop from the fizziness of the kombucha.

I made 6 of them several days ago and I have been slapping my own hand away so that I don’t eat them all before someone else has a chance to try them.

If you have never tried kombucha, you really must. Kombucha is made from fermented tea and it is great for your digestion and your general health. There are so many flavors available, pick whatever makes your tastebuds sing. Oh, and feel free to change up the type of berry. I think I’m using raspberries next time… yum!

Blend up your ingredients, pour them into ice pop molds, and you've got the most delicious, guilt-free, healing dessert!
Ingredients
  • 12 oz fresh blackberries
  • 8 oz kombucha (I used Cranberry kombucha, but use whatever flavor you like)
  • 2 Tbs pomegranate seeds
  • 1 scoop Vital Reds powder (This is optional, but if you have a red nutritional powder, I recommend putting a bit in.)
Instructions
  1. Put all of the ingredients in a blender.
  2. Whiz it up.
  3. Pour into ice pop molds.
  4. Place in freezer until fully frozen.
  5. Enjoy!

Stuffed Sweet Potatoes

Stuffed sweet potatoes are a great go-to last minute dinner — stuff them with whatever makes you happy!

I was in the kitchen and I had no clue what to make for dinner. It’s not that I didn’t have any ideas, it’s that I was feeling kind of lazy (OK, more than kind of lazy) and I didn’t want to go to the market. But, as I was looking around, I really felt that everything I was in the mood for required an outing, which required more energy than I was willing to put forth.

I had a few sweet potatoes left over from Thanksgiving. And these were no ordinary sweet potatoes. These tubers were almost as big as my head. I mean, obscenely huge. It was time to get them off of my counter (I mean, they were taking up so much room and I needed the space…), so I poked them with holes and roasted them in the oven. For a long time. They were so big that it took about an hour and a half for them to be done!

While they were cooking, I had a lot of time to create a stuffing.  I’ll admit that some my incentive came from my desire to forage within the confines of my kitchen so I could avoid having to put my coat on to go outside… And, let me tell you, this recipe is a keeper. Butternut squash, tomatoes, sage, pomegranate seeds, avocado, jalapeños… sooooooooo good!

Feel free to use creative license with this recipe. Use whatever you have in your fridge. I finished mine off with a drizzle of spicy sriracha mayonnaise… this, I highly recommend…

It’s a good fever reducer, it can lessen stomach pain and it can be a comfort during pregnancy when the baby feels like she’s doing acrobatics. It’s also rich in carotenoids and Vitamin B6. This means it’s good for your heart and can help lower bad cholesterol. And, because butternut squash can help reduce inflammation in the body, it benefits almost everyone.

Avocados are one of my favorite foods, both for their health benefits and because they taste great. In Chinese medicine, some practitioners recommend avocados to raise the sperm count. I like them because they are good for anemia, dry skin, palpitations and hot flashes due to menopause.

Spicy foods can also help tremendously with certain types of arthritis and can benefit heart function.

Stuffed Sweet Potatoes With Butternut Squash, Avocado, And Jalapeños

These sweet potatoes are stuffed with butternut squash, avocado, tomatoes, jalapeños, and pomegranate seeds... they make for an awesome simple and healthy vegetarian meal.
Ingredients
  • 1 large sweet potato
  • 1 lb cubed butternut squash
  • 1 pint grape tomatoes
  • 7 fresh sage leaves
  • 1 tsp extra-virgin olive oil
  • sea salt
  • 1 jalapeno pepper, sliced
  • ½ of an avocado, diced
  • 14 cup pomegranate seeds
  • ¼ cup mayonnaise
  • 1 tsp sriracha
Instructions
  1. Preheat the oven to 400 degrees.
  2. Prick the sweet potato all over with a fork and roast it in the oven until it's done (my sweet potato was so huge that it took 1-1/2 hours in the oven!)
  3. Place the squash, tomatoes, and sage on a baking tray. Drizzle with oil and sprinkle with salt. Toss to combine and spread out in a single layer.
  4. Place this tray in the oven and roast until the squash is tender and the tomatoes start to caramelize, about 35 minutes (depending on the size of your squash cubes).
  5. Make the sriracha mayo by mixing together the mayo and sriracha in a small bowl.
  6. When the potatoes are done, remove them from the oven, scoop out a little of the insides if you like, then fill or top with the squash tomato mixture, the avocado, jalapeños, and pomegranate seeds.
  7. Drizzle with the spicy mayo.
  8. Enjoy!

 

Persimmon Pomegranate Smoothies

When persimmon season hits you have to try these persimmon pomegranate smoothies — so sweet and so healthy!

Here it is the day after Thanksgiving. When I walked into my kitchen this morning and looked around, I saw all of the food that remained staring at me. I’m not talking about leftovers (although there are plenty of those…); I’m talking about the fresh ingredients that I bought with grandiose ideas of preparing so many more dishes than we needed. Or that I had time to make. Or that I was in the mood to make after a few glasses of wine…

So,  this morning, on my kitchen island calling out to me were the most beautiful, huge persimmons you have ever seen. Persimmons are amazing. They are in season now and here in New York they are everywhere. The farmers markets have them, the fruit vendors on the street are carrying them, and the supermarkets are well stocked. So, a few days before the big event I bought 4 huge persimmons. I was going to make a salad with arugula, kale, persimmons, cranberries, nuts, and cheese. Well, that never happened. So… what to do with these deliciously sweet and juicy persimmons????  Breakfast smoothies!!!

If you’ve never had a persimmon, this is the time to try them. I was a first-timer up until a few weeks ago and now I’m kind of obsessed with them. I can’t figure out what fruit they are similar to, but they are great. They are really, really sweet and smooth and beautifully orange. They actually kind of taste like they look.

These persimmon pomegranate smoothies are as good for you as they are beautiful:

Persimmons are great for some coughs and sore throats. They can also relieve diarrhea, quench thirst, and lessen the effects of a hangover. The tops/stems of persimmons are a Chinese herb (Shi Di). This herb is used to stop hiccoughs and can be mixed with other herbs to stop vomiting.

Bananas (I like to use frozen ones that I keep in the freezer all year round) make this smoothie particularly creamy and give it a great ice-cream-like texture. Bananas are good for your intestines (an old Asian remedy was to eat a banana every day to relieve hemorrhoids) and your lungs, and they even help relieve the effects of overindulging in alcohol.

Goji berries are a chinese herb (Gou Qi Zi). They are great for your blood. I prescribe them to some people with chronic pain in the legs and lower back. They are also good for men experiencing impotence and can be used to treat some eye problems. The bright orange taste and flavor of this smoothie is from persimmons, pomegranate seeds, goji berries, clementines, and bananas. It will brighten your day and keep you healthy!
Ingredients
  • 1 frozen banana
  • 2 large Hachiya persimmons
  • 2 Clementines
  • 2 Tbs goji berries
  • 2 Tbs pomegranate seeds
  • 1 Tbs bee pollen
  • 2 tsp maca root powder (here's a good one)
  • ⅔ cup coconut water (I like this kind)
  • 6 ice cubes
Instructions
  1. Put all ingredients in blender (my Vitamix made quick work of this) and blend until perfectly smooth. Enjoy!
